Hot Jam Tortilla Donuts

4 large soft La Banderita tortillas
4 heaped tbs of raspberry jam
150g ricotta
1/2 cup caster sugar
1/2 tbs cinnamon
Butter, for brushing
Combine sugar and cinnamon together.
Pre heat sandwich press and brush with butter.
Working with two tortillas at a time, press half of the tortilla into sandwich press cavity.
Add a generous dollop of ricotta and jam and fold over to enclose. Brush with more butter and close to toast until golden.
Toss jaffles in cinnamon sugar. Trim the sides and serve warm.
